Evanille route Gourmet Grade A Extract Grade

Read that table carefully, because most vanilla sellers blur it. Both grades come off the same vines and carry the same 2.5% vanillin. The moisture difference is four points, worth about 6% more dry solids per kilo in Grade B — real, but small. What is not small is the price: roughly half.

So the rule is simple. If the bean is seen, buy Grade A. If the bean is steeped, ground or strained out, buy vanilla beans for extract — you get the same vanillin and stop paying for an appearance nobody will ever see. Undecided? Read Grade A vs Grade B.

Questions buyers actually ask

FAQ

What is the difference between vanilla beans and vanilla pods?

None. “Vanilla pod” is the common British term and “vanilla bean” the American one; both describe the cured fruit of the vanilla orchid. Evanille lists everything as beans.

How many vanilla beans are in a pound?

Roughly 125–150 beans per pound in both grades — about 275–330 per kilo — at our standard 5–6 inch (13–15 cm) length. Count varies a little with length and moisture; exact counts appear on each product page.

Which vanilla beans should I buy for making extract?

Grade B / extract grade. Same 2.5% vanillin as gourmet, split pods that start extracting on contact, and roughly half the price for a pod you are going to strain out anyway. Start at vanilla beans for extract.

How should I store whole vanilla beans?

Vacuum-sealed or airtight, cool and dark, never refrigerated — condensation causes mold. Properly stored beans hold quality for months. Full method in storing vanilla beans.
