Gourmet Grade A
Grade A gourmet is the bean you buy when the bean is part of the product. Plump, oily pods at 32% moisture and 5–6 inches (13–15 cm) that bend around a finger without cracking, split cleanly, and give up a heavy load of caviar under a knife. Scraped into crème brûlée, steeped in a custard base, laid across a plated dessert, sold whole in a jar — this is the grade that earns its price by being seen.
Ours are Ugandan V. planifolia, which adds something most gourmet beans on the market don’t have: naturally high vanillin and a bold, earthy profile with chocolate undertones. Sweet like Madagascar, but with a backbone that survives butter, sugar and heat.

What Grade A means at Evanille
Grading happens at our own curing facility in Uganda, under our own QC — length, moisture, oil content and appearance are checked before beans are vacuum-packed for export. Because we control the chain from farm to our Florida warehouse, “Grade A” is one fixed standard rather than a reseller’s guess, and every box traces back to its lot. That consistency is the entire point when your recipe, your label and your reorder all depend on the same bean showing up twice.

Every Evanille bean is a single-origin, single-ingredient agricultural product: cured, graded, vacuum-packed. Nothing added, no irradiation, no artificial vanillin. Organic certification is available on request — our beans are not sold as certified organic by default. If your label requires certification documents, text us before ordering and we will confirm what the current lot can support.
Grade A or extract grade?
Buy Grade A when the pod is scraped, displayed, or sold whole. Buy extract grade when the pod gets steeped and strained — same 2.5% vanillin off the same vines, roughly half the price, and no one will ever see it. FAQ
What qualifies a vanilla bean as Grade A?
Moisture of 32%, an oily and unblemished surface, and enough flexibility to wrap around a finger without splitting. Grade A is judged on appearance and moisture — not on flavor. Grade B is the same bean, off the same vines, at the same 2.5% vanillin, that did not clear the cosmetic bar.
Are gourmet vanilla beans worth the price over Grade B?
For anything where the pod is scraped or seen, yes — caviar yield and presentation are visibly better. For extraction, no: extract grade carries identical vanillin at roughly half the price, and the flaw you are avoiding is invisible in a bottle.
Are your vanilla beans organic?
They are grown and cured without additives, irradiation or artificial vanillin, but they are not sold as certified organic by default. Organic certification is available on request — ask us for current documentation before you order for a certified label.

What is the smallest quantity I can buy?
