Splits and Cuts

A split is a vanilla pod that opened — on the vine, or during curing as it dried and contracted. A cut, or vanilla stick, is a pod sectioned into shorter lengths. In both cases the bean is the same bean: same origin, same cure, same vanillin. Only the packaging nature gave it has changed.

Which is why splits are the quiet value play in vanilla. Processors who never show the pod buy them almost exclusively, and pay meaningfully less per kilo for flavor that is identical in the jar.

Why splits extract faster

Extraction is surface-area work. Alcohol has to reach the seeds and the inner pod wall, which is why every extract recipe tells you to split the bean before it goes in the jar. Splits arrive already opened — the step is done, the surface is exposed, and maceration starts on contact rather than after the pod softens. Cut sticks do the same thing at the ends, and drop straight into a grinder or a steeping basket without knife work.

For a production kitchen, that is labor removed from every batch.

FAQ

Are split vanilla beans lower quality?

No. Splits are graded from the same cured stock as whole pods — the opening is cosmetic. Moisture, vanillin and flavor match. You are declining to pay for an intact exterior you were going to cut open anyway.

What are vanilla sticks?

Cured vanilla pods cut into shorter, uniform sections. They handle and dose more easily than full-length pods and feed grinders and steeping baskets without prep. Same bean, different length.

Do splits work for scraping caviar?

Yes — they are arguably better, since the pod is already open. Buy Grade A splits if caviar yield and appearance matter.

How much cheaper are splits than whole beans?

Enough to change the math on any process that grinds or steeps: Grade A splits are $60/kg in the 25 kg case against $120/kg for whole Grade A pods in the 10 kg box — half the price for the same 2.5% vanillin.
