Most vanilla extract tutorials tell you to “put a few beans in a bottle of vodka and wait.” That produces vanilla-flavored vodka, not extract. Real vanilla extract — the strength you buy in a store, the strength that performs in recipes — is defined by a federal standard, and it uses far more beans than most guides admit.

This guide gives you the actual numbers: the FDA single-fold ratio, why Grade B beans are the professional choice, which alcohol to use, how long extraction really takes, what a pound of beans yields, and how the math changes at commercial scale.

The FDA single-fold standard: the only ratio that matters

Under the FDA’s standard of identity for vanilla extract (21 CFR 169.175), a product labeled “vanilla extract” in the US must contain:

  • 13.35 ounces of vanilla beans per gallon of finished extract — measured for beans at 25% moisture or less
  • At least 35% ethyl alcohol by volume (70 proof)

That bean content is called one fold. Double-fold (2X) extract uses twice the beans per gallon — 26.7 oz at the reference moisture, or ~27.8 oz of our 28%-moisture extract grade — and commercial folds go higher still for industrial use.

Two details almost every home guide misses:

  1. The ratio is moisture-adjusted. 13.35 oz/gal is written for beans at ≤25% moisture. Almost no cured bean on the market is that dry, so almost every batch needs adjusting upward. The FDA is really asking for a fixed weight of moisture-free bean solids — 13.35 × 0.75 = 10.01 oz of dry solids per gallon — and you scale the wet weight to hit it. Evanille’s Ugandan beans:

    • Grade A gourmet at 32% moisture: 13.35 × (0.75 / 0.68) = ~14.7 oz per gallon

    Use the textbook 13.35 oz number with either grade and your extract comes out legally — and audibly, in taste tests — under strength. Ask any supplier for a moisture figure; without it you cannot compute your real fold.

  2. “Number of beans” is meaningless. Bean weight varies with length and lot. Our beans run 5–6 inches (13–15 cm) and about 3.0–3.6 g each — roughly 125–150 beans per pound — but recipes that say “5 beans per cup” can be off by 100% either way. Weigh your beans. Always.

For Grade A at 32% moisture, multiply every weight above by 1.06 (1 gallon = 14.7 oz / 417 g, roughly 115–138 beans).

Grade B vs Grade A for extraction: why pros use B

Grade A (“gourmet”) and Grade B (“extract grade”) beans come off the same vines; the difference is moisture and appearance. Our Grade A is plump and supple at 32% moisture; our extract grade runs 28% — drier, but not dramatically so.

For extraction, Grade B still wins, though for narrower reasons than most guides claim:

  • Price does the heavy lifting. Grade B costs substantially less per pound than Grade A for beans off the same vines, with the same 2.5% vanillin. That is the whole argument, and it is a big one.
  • Cosmetics are irrelevant. Splits, blemishes, and short beans extract identically; the alcohol doesn’t care. You are refusing to pay for looks.
  • Split pods extract faster. Extract-grade lots are largely split, which means the seeds and inner wall are already exposed — the same head start you’d otherwise create by hand with a knife.
  • Slightly more solids per pound — emphasis on slightly. At 28% vs 32% moisture, a pound of Grade B carries about 6% more dry bean solids than a pound of Grade A (72% vs 68%). Real, but marginal. Guides that tell you Grade A is “mostly water” compared to Grade B are describing beans nobody sells.
  • Neither grade uses the textbook ratio. Both are wetter than the FDA’s 25% reference, so both need adjusting: ~13.9 oz/gal for Grade B, ~14.7 oz/gal for Grade A. Grade B needs about 5% less weight per gallon — not 15%.

Origin also matters more than most tutorials acknowledge. Choosing your alcohol

The FDA requires a minimum of 35% ABV in the finished extract. Practical guidance:

Skip anything under 70 proof — you’ll fail the standard and risk poor preservation. Expensive premium spirits are wasted here; clean mid-shelf is the professional move.

Method and timing

  1. Weigh the beans for your batch size (table above).
  2. Split lengthwise, then cut into 1–2 inch pieces. More exposed surface area = faster, more complete extraction. (Commercial producers chop or grind for the same reason.) Leave every seed and scrap in.
  3. Submerge fully in the alcohol in a sealed glass container. Any exposed bean can mold.
  4. Store cool and dark, shaking once a week or so.
  5. Wait — genuinely. The FDA sets no minimum time, but flavor chemistry does:
    • 1–2 months: usable but thin
    • 3–6 months: good depth for most uses
    • 6–12 months: full extraction — this is where single-fold extract earns its name
  6. Strain or don’t. Leaving beans in continues developing flavor; strain through fine mesh and coffee filter for a clean commercial appearance.

Yield: what a pound of beans actually makes

At the moisture-adjusted single-fold ratio (13.9 oz/gal for our 28%-moisture extract grade), 1 lb of Grade B beans yields ~1.15 gallons (about 4.4 liters) of extract — roughly 147 fl oz, or about 36 four-ounce retail bottles.

Commercial-scale notes

Scaling from mason jars to sellable product introduces a few realities:

  • Label law is strict. To print “vanilla extract,” you must meet 21 CFR 169.175: the fold ratio, ≥35% ABV, and permitted optional ingredients only (sugar, glycerin, etc. as listed). Under-beaned product must be labeled “vanilla flavoring” — and competitors do check.
  • Percolation beats maceration for speed. Commercial producers circulate warm (not hot) alcohol through chopped beans over days-to-weeks instead of soaking for months. Cold maceration remains the artisan claim; percolation is how the big houses hit volume.
  • Buy beans on specs, not photos. Moisture content and lot traceability are what determine your true cost per gallon of legal extract. A supplier who can’t state moisture can’t tell you your real fold math.
  • Supply continuity is a business risk. An extract business that can’t get beans in March because its supplier sold out of the annual Madagascar shipment is a seasonal business.
